Ingredients:
1)6 lemons
2)1 cup lemon juice
3)1/2 tsp turmeric powder
4)4 tsp red chilli powder
5)1/4 cup of sesame oil
6)4 tsp salt
For Making Masala:
1)1/2 tsp methi seed
2)1/2 tsp fennel seed
3)1/2 tsp ajwain
4)1/2 tsp kalonji
5)1 tsp oil.
For Seasoning:
1)1 tbsp oil
2)1/2 tsp mustard seed
3)3-4 cloves
4)1/2 tsp hing powder
Method:
1)Wash lemon and wipe dry.Cut lemon(in quarters).Add salt,turmeric powder & lemon juice.
2)Put it in a clean,dry jar.Keep it aside for a week.[shake the jar twice everyday]
3)After a week, add redchilli powder to this soaked lemon and mix it.
4)Roast all the masala ingredients, cool & grind it.Add the ground masala to lemon & mix it.
5)Mix the seasoned ingredients to lemon.
6)Heat 1/2 cup of sesame oil & let it cool.Add this to the lemon mixture & mix it.
7)Place this in a glass jar and close the lid tightly.
8)Sun this mixture for 10 days till lemon becomes soft.
9)Serve with curd rice,chapathis.
Note:
1)If the salt is less, lemons will get decayed due to fungus.
2)Be cautious not to get the pickle in contact with water.
